& Goat Cheese Salad
few of my favorite things!
a spring salad mix, fresh goat cheese, confit of duck (I used
wings for this dish), Olive Oil, a favorite vinegar, thyme
and Rick's Chef Salt
and steam the beets as shown. Then steam and crisp up the confit
as shown. As the confit is cooking make the salad dressing,
add the greens, mix, plate and serve.
