Roasting a bone in
Leg of Lamb

Part 1 in a series

You can rub a leg of lamb with just about anything you want. The "trick" is how to cook it and that depends on what you want your end product to be. In this video we are using a lower heat and cooking it a little longer with vegetables to make a roast to eat now and have enough to play with later.

Ingredients:

A whole bone in leg of lamb rack, Minced garlic and olive oil

Seasonings - Sea salt, cracked black pepper and Herbs de Provence

The vegetables used - Carrots, celery, garlic, onions (here I'm using shallots), potatoes (these are golden fingerlings) seasoned with; parsley, sea salt, cracked black pepper and olive oil

To Make:

Heat your oven to 350°, rub the leg with your favorite rub (see video below for one suggestion) surround with seasoned vegetables and bake about 90 minutes until the roast is about 130° or less in the center for medium rare (next to the bone) to medium. Taste the vegetables and if they aren't done to your likeness, put them back in the oven while the roast rests.

End Note

This was prepared for two for dinner so we'd have plenty of leg of lamb to play with later! Great for sandwiches, tacos, and then all kinds of; risotto's, paellas, cassoulet, pasta dishes, salads, and so much more!
