Mini Gateau Sammys

This is a mini version of Gateau au Chocolat (chocolate cake) we served at the Black Sheep made into the ultimate ice cream sandwich.

Ingredients for Chocolate Gateau (cake):

8 oz Dark Chocolate
1/2 cup water
1/4 # unsalted butter
5 eggs separated
1/4 c flour
1/3 c sugar
1/2 tsp vanilla

Then use the best vanilla bean ice cream or gelato you can find!

Please watch the video to see how to do this. Trying to explain the "moistness" of the egg whites and what the cake should look like when it comes out of the oven before you put a plate on it, is impossible in a written recipe.
