Eggs Benedict

I don't make these often either, but I love it when I do. This video came about from a question regarding frozen egg yolks.

Ingredients (usually 2 per person of the following):
English muffins or favorite bread, brioche etc.
Canadian bacon
Hollandaise sauce (see video on Hollandaise)

Make the Hollandaise, then poached the eggs, saute the bacon, toast the muffins, and assemble.
