Ariane Daguin, the owner of D'Artagnan, was one of my culinary heroes and I was fortunate to have her and her friend Jean Lassus as mentors when I was learning to make confit and cassoulets. You won't find better specialties from the Southwest of France in this country, and I'm willing to bet you won't find much better in France either. The products offered at D'Artagnan are in my opinion, the best.
